These Lemon Donuts are amazing!

Ingredients:
* 1 1/4 cup gluten free flour blend, (*Note, add 1 tsp xanthan gum if it is not included in the blend).
* 3/4 cup almond meal, almond flour, or coconut flour
* 3/4 cup sugar
* 1/2 teaspoon baking soda
* 1 teaspoon baking powder
* 2/3 cup coconut oil, melted
* 1 teaspoon vanilla
* 1 tablespoon lemon juice
* 1/2 cup applesauce
* 2 large eggs

Instructions:
1. In a large bowl, combine all dry ingredients and whisk together to blend.
2. In a medium bowl, add all wet ingredients and whisk.
3. Pour wet ingredients into the dry ingredients and mix well.
4. Preheat oven to 350 degrees.
5. Put a little dough into each section of the mini donut pan.
6. Bake for 15 minutes.
7. Remove and put onto cooling rack.
8. Ice, frost, or eat plain.
