Give these Protein Cookie Dough Cups a try!

Prep Time: 10 min.
Total Time: 70 minutes.

Ingredients.
.
50g oat flour – plain oats ground into a flour in the food processor. Use gluten-free oats if necessary.
50g vanilla vegan or paleo friendly protein powder.
5 tbsp almond butter (or any nut butter).
4 tbsp melted coconut oil.
50g dairy-free chocolate chips.
250g dark chocolate.

Instructions.
.
1. Mix the protein powder and oat flour in a bowl, then add in the almond butter and coconut oil. Mix to combine, then fold in the chocolate chips.
2. Break up the dark chocolate into a heatproof bowl. Melt it in the microwave on high, stirring every few seconds to make sure it doesn’t burn.
3. Place in the freezer for 10 minutes.
4. Distribute the cookie dough between the cups, making sure there’s enough space at the top for another layer of chocolate.
5. Top with more melted chocolate, then place in the fridge to set for one hour.
6. Enjoy!
